Bone-in rib roast question

I've still never made a beef rib roast.
That will change soon.

Costco sells packers for a good price.
I know that a bone-in cook would be best, but can the ribs be trimmed to make two or more meals/cooks, ribs and a whole boneless roast or two?
I'm no butcher, but I have some big sharp knives

But what I really want to know is, can a meal be made from the rib section alone, for another cook. Is there enough meat left on the bones?
Unless I missed this info on the video.
 
Well I suppose it depends on how many bones are in your rack and how much of an appetite you have. I've made a meal (for myself) out of the 3 to 4 bones on my bone in roasts the next day.
 
I cook the bones with the roast. I do not serve the bones. To me that is my bonus as the cook. Whether I eat them the day of the cook or the following day does not matter to me. To the cook goes the spoils, as it were.

I only do one cook, however, for these two meals.

I agree RD!
Since these are whole packers, I was looking to get 2 or 3 cooks.
I think they have at least 8 ribs, so I was thinking about one rib cook, a roast cook, and perhaps some steaks too.
