Black Magic on Steaks

I was at a restaurant and the waiter said that the steak had black magic on it. It appears to have a sugar content because it charred the steak nicely. Does anyone know how to duplicate this?
 
My guess would be that you ordered a blackened steak? If so just use a blackening seasoning and fry it in a very hot dry skillet. HTH
