BIG PARTY BIG QUESTIONS

So I'm having a big going away type party.
My invite list ballooned out to just shy of 50 people.
hopefully not everyone will make it.
but lets say they do.

Whats the most amount of ribs anyone has successfully cooked on the 22.5 wsm i'm going to buy rib racks specifically for this and need to know what my best options are for which racks to buy and placement. and any other things i should know about cooking lots of ribs.
 
Jonny, A few years ago I cooked ribs for a BIG party like you mentioned. I ony have an 18" wsm but at that time I was using a couple larger Webber grills. My suggestion would be to cook as many ribs as you can to about 1/2 done. It took me several rotations. Hold the 1/2 cooked ribs in a low oven with moisture of your choice. When your guests arrive they will want to see you cooing and smell the meat so at this time I would take the ribs out of the oven an put on the grill or smoker to finish. Of course this all depends on how many ribs you can get on in one batch. There is a recent post where a member has put 17 racks on his 22 WSM at one time.

not too late i was thinking pulled might be easier but i already promised ribs and wanted to see what i could do with them

If you figure 4 ribs per person for 48 people that's at least 16 racks of ribs.

What else is being served?
 
thats what i was kinda thinking 16 racks and maybe deep fry a turkey.or pull some pork. do you think4 ribs per person is enough.

and its going to be a potluck so there will be lots of coleslaw pasta salad and taco salad.
 
Jonny, If you want to do another meat I would suggest either yard bird or beef. You already got pork so throw in some variety.
