MKEvenson TVWBB Wizard Feb 17, 2011 #2 Mike, YELL at them , if they moo then they need more time. I use the same method as pork ribs. Look at color, look for pull back, stick a prob in the meat and feel. Yah it's different textured meat but there should be little resistance. Mark
