Ive read that one way to tell if ribs are done is to bend them. I know this sounds stupid but which way? Meat side up or bone side up? And what am I supposed to be looking for?

Jim,

This usually applies then cooking them flat on the cooking grate. If you pick them up in the middle with a pair of tongs the ribs will easily bend and nearly break. Then, they are done.

Jim, I use the tear method myself...as do a lot of folks. Grab two bones and pull...if it tears easily then they are done!! Eazy!
