Beer Can Turkey...foiled pan or no pan?

Hi everyone, long time no post....

I am doing a beer can Turkey tomorrow for my famiy's Thanksgiving Celebration using the Bayou Classic Beer Can Turkey Rack.

I did the same thing last year but I don't remember what I did in terms of the water pan. I am boing to have the turkey on the lower rack and I bought a foil roasting pan to put under it. My question is, should I keep an empty foiled water pan underneath the rack if I am using the foil roasting pan or not. Should I ditch the roasting pan and just use the foiled pan to catch the drippings ala the turkey recipes on the main page? Opinions greatly appreciated and pics to follow on Sunday.

Tom </div></BLOCKQUOTE>Hi Tom, I take it you mean to set the beer can turkey directly in the foil pan you purchased. If your aim is a high heat cook that is all I would use, I think it's a great idea to skip the water pan altogether in that case. If you are hoping to use the drippings for gravy, any more than very light smoke may make the drippings too smokey to use for gravy IMO.
