Beef Tender

Chris what a great article and what great timing. I have a tender defrosting now. Over Thanksgiving, I read about roasting in How To Cook Meat. Two nights ago Alton Brown did a show on roasts. AB recomended just as you did to brown LAST. My method had been to brown first, reasoning it is easier to control the final internal temp that way. You and AB have convinced me to try browning last.

One question-AB recommended air drying for a day or two for roasts. Would a tender from cryovac benefit from a day of drying Too?

What a wonderful Tender. I did Chris' recipe except I air dried the tender for a day. Awesome rich big beef flavor. Not the lightweight taste you oten get when ordering a filet. I used light peach wood-it was just right. this tender went 7lbs. and took about 80 minutes to get to 125. The smoke was just enough without overpowering the meat. This is a great way to cook beef tenders. Thanks Chris.
