Beef Round Sirloin Tip

Help me out please, I seem to have bought the wrong type of meat. I wanted to smoke a Beef Roast to pull for a party this weekend but I think I bought the wrong item.

I bought a Beef Round Sirloin Tip Roast. My question is can I smoke this and then slice it thin for sandwiches, or will it pull apart like pulled pork if I cook it properly?

Any ideas?
 
Not much connective tissue in that kind of roast, so it won't pull properly. I've smoked that kind before and sliced it. But you want to cook it no more than medium for sandwiches. Like 130 or 135.

I thought I would cook it until it reaches 120, then remove and wrap in foil and a towel and place in the cooler until ready to slice.
 
That should work. I'm doing the same thing later in the week. I've got a pork shoulder I'm going to smoke - should take 6-8 hours. I'm going to put the roast in after about 4 hours.

Sirloin tip makes good 'roast beef'. If you want a more even doneness - say, med-rare or medium pretty much from center to edge - cook low/slow. If you'd like a more of a range - say, rare/med-rare center to medium/med-well near the edge - cook ~325.

If you low/slow to 120 you will not get much residual cooking and the finish will be fairly rare. If low/slowing take it a bit higher if you're counting on med-rare.
 
Thanks Kevin, so I will cook it low/slow to about 130.

Should the cooking temperature be around 225-250?
 
I've had these cooked in the oven before, but want to put it on the WSM this weekend. If cooking temp is around 250, and want to take to 130 internat, how long would you guess that to take for a 3 or 4 pound roast? I don't have a Maverick probe therm, but use a thermo-pen, so it's always a guess on when to check the temp.

I smoked one this weekend - a little over 3 1/2 pounds. Smoke at 250ish. Checked at 2 1/2 hours and the internal temp was 138, so I pulled it and let it rest in foil. Good and med rare in the middle and medium at the ends, like KK said. The roast beef had good flavor. I smoked with 3 chunks of apple, and would probably use only 1 next time. But I will definitely do this again.
