I finally found some Beef short ribs at the local butchers. $3.29 /lb. So I have a trial run going today. These things look pretty meaty and came three bones to a slab. I'm anxious to see how they turn out.
For a first time cook I think they turned out pretty good. Nice flavor,smoke ring and tender. Cook time was a little over 4 1/2 hours with the smoker running pretty steady at close to 250. I'll definitly be doing these again.
