Beef Ribs thanks for the help


 
Dave, I'm curious about your cooking temp. They look great by the way, especially the rack of custom cut. You rendered them really well too. Congratulations.

Gary It was windy that day and I had some big spikes in temps but it did settle in at 262 for most of the cook
 
Thanks guys for all the nice comments on the ribs and my backyard. As an ex northerner (NJ and Midwest) I no way intended to make my post anything but highlighting the ribs. After 60 years of living up north I kind of miss the winter-----Kind of (who am I kidding heck no)
