Hello all,
I smoked beef ribs and chicken thighs in my on this glorious Saturday in California. I brined the chicken thighs for 2-hours in water, salt, pepper corn, brown sugar, granulated garlic, and rosemary. The beef ribs were seasoned with salt, pepper and granulated garlic. The chicken was done after 3.5 hours; juicy and tender (no BBQ sauce). Beef ribs took 4.5 hours; also juicy and tender. I wish the ribs were meatier. I used hickory for my smoke.
