Love beef ribs, but noticed this over the weekend smoke. I took off the papery membrane on the bone side, but then notice another membrane type layer that was quite thick and had the consistency and thickness of let's say a rubber glove. It seemed to be very attached to the bones and did not come off at all. It definitely wasn't the membrane since i peeled that off.
Any insights to beef rib anatomy?
