Now that I have found a good way to get good long lasting smoke using Traeger pellets on my gas Genesis I made some beef jerky that was ok. Question is : Should I cold smoke the raw beef first or after it is marinated overnight then finished in a oven ? I am about ready to try some Salmon jerky next. Thanks. *BW*

I think you should marinade it and then cool smoke it until it just cracks when you bend it. I've not had to finish it in the oven although I do use a WSM vs a Genesis.

Marinate it first - I think that's part of the food preservation method....
this USDA page says to heat it to 160F before dehydrating it, I've never done that. The old man made salmon jerky a few times and I liked it.
