Beef Brisket on the WSM using the Stoker with clay saucer mod.


 
Looking good. I also went to using the terra cotta pan along with the Piedmont pan mod this weekend and had great results with my 2 butts. Looks like I need to step it up a pace and try brisket next weekend. All of yours looks just like incredible edibles to me.

Thanks for the reply!. I was pretty happy with the results and everyone enjoyed the brisket and fattys. I agree on the brisket having a killer smoke ring.On my next brisket, I will be slicing it a lot thinner than the first time.
Actually, now that you mention it, I have a 3lb point in the freezer that I'm going to take out and give it a smoke.May try an injection technique with this one.

Hope you smoke goes well!!! I rubbed a 4.89 pound Flat and two racks of BabyBacks that I'm gonna smoke 2morrow after work!! I'm also gonna High Temp cook 4 Butts on my Kettle 2morrow for my church..Gonna be one busy Friday!!!
