Beef back ribs

My Costco sells a lot of these packages of beef back ribs. Did them on the Z. Outstanding. Just let them ride at 235 until thickest part hit 185, wrapped, put them back on, for about another hour, the dropped them down to the keep warm setting. Outstanding. Sorry no photos. At the evidence LOL
 
Yes sir, it's short rib season (usually thru Independence Day) I picked up some Flanken cut, a dozen for $28. I've got them dry brining in the fridge for tomorrow; 4 dry brining in The Blend, 4 in Montreals, and 4 in Slap yo mama cajun. I'm going to smoke them at 225 for maybe an hour until tender
