Beans: "plain and simple"

Thats what my wife asked for. I personally have never made beans this way. She does not care about type so I was thinking pinto's or black.
I was thinking that I would just boil some up in some stock or seasoned water. Am I thinking right. Any help would be welcomed.

If you want plain and simple, cook the beans with a left over smoked chicken or turkey wing or leg in the pot. The smoked poultry will flavor the beans.

Also, you can serve them with a dollop of catsup and some chopped green onions.

Not much simpler than that.

Using stock is a good idea. There isn't much flavor in pinto beans boiled in straight water. I will use a ham bone if there's one around. Pick up some smoked ham hocks if they're available at the store and boil those for a couple of hours. Even canned/boxed chicken stock will improve the flavor. I'll frequently add onion, garlic, cumin to my beans. You can add many other seasonings, but just a few will greatly help.

for black beans, I usually use a combo of cumin, oregano, epazote and bay, but that's not really "plain and simple."

there's something magical that happens when you mix beans and pork fat. I'll bet you would be shocked by how good beans, merely cooked in water, can be if you add a few tbs of bacon grease.
 
We eat a lot of black and pinto beans. I like to add some taco seasoning to the pot when the beans are done cooking for seasoning.
