Three butts, all about 5.75 lbs, nearly naked but a little flavor, on the WSM, it's midnight, WSM set to ~230 with the guru, going to bed. I'll make adjustments in the AM, throw on a couple of baby backs and a few sausages for fun, and prep for a party tomorrow evening! Night all!

Good morning, all! The wsm ran a little hot, if you can call 260 "hot", but the big butt is at 185 this AM. I imagine it's running hot because this is the first cook since I cleaned it to new condition before we recently moved, and they always run hotter new. No problems, I've cranked down the guru and closed the top vent to 1/3. I really want these butts to reach 200 sometime after lunch, that way with foiling and "coolering" they will be warm come 6 PM. Still, no problems! Q is great whatever the conditions! Have a great day.
