I took a stick of Bologna & sliced it down the middle. Peeled off the red skin. Sprayed the flat side with vegetable oil. Then applied my rub. Cooked on the smoker at 225 for 2 1/2 hours. Used cherry wood. Took off the smoker & sliced into 1/2 inch slices. Applied BBQ Sauce to each side. Put Bologna in a pan at that time. 1 mote hour to carmelize the sauce. May be weird but it's delicious
Love smoked bologna, yours looks fantastic too. Last time we went camping a got a small chub of bologna to smoke from the deli counter and my Wife just kind of rolled her eyes at me. She ended up eating most of it.
