Happy New Year's Eve,

I'm cooking a 7lb packer for the first time under two butts. I've reached 185+ in several places in the brisket, but other places are hovering around 175+. How much heat can a brisket take in order to get the whole thing to at least 185?

I think (but may very well be wrong) that you want to monitor the temp in the flat, not the point.

Does the probe slide in the flat easily?
