BB Ribs Question

Hey Everyone,

I am going to BBQ my first 3 racks of baby backs today. I wanted to try the 2-1-1 method. The thing is, I think I am going to have to coil my racks to fit. How do you foil if you have to coil them? Also, I am not going to use water in the pan, should I take the water pan out? I am cooking my first fatty as well so should I leave the water pan in there so no flair ups?
 
I'd leave the pan in place and put foil inside of it. I usually leave a small air space between the foil and the pan.

I don't do much foiling, but I have put ribs in a disposable aluminum pan and covered that with foil. That works a little easier for me when I have more than a couple of racks. It also might be one way to fit them in the foil. Or you could just uncoil them. Somebody else might give you better advice on this point.
 
you can foil all 3 if you use both racks on the WSM....Or you could just foil one or two racks and keep the other uncovered so you can compare and learn how foiled and notfoiled are different.
 
I did end up using both racks on the WSM. 2 on top one on bottom. I smoked at 250 for 2 hours, then foiled them and went an hour, then unfoiled them for a half hour or so. I almost could have knocked back the foil time to a half hour. They were pulling away from the bone quote a bit after an hour of being foiled. But they turned out great none the less. I might try to not foil next time to compare.
 
once you have decide to foil, unroll, foil
each, and then just stack them on top of each other, at that point it won't make any difference. when it's time to unfoil and back on the grate to harden the bark, then you can 'tent' them...think of a pup tent, for 1/2 hour or so.
 
As you can easily see, baby backs can't stand too much time in the foil. Try less time in the foil or possibly skip the foil altogether on BB's. My choice is spares trimmed out to St Louis cuts, then do a 3-1-1. Depending on the thickness, a full hour in foil will not get them overdone and they come out perfect.
