timothy TVWBB 1-Star Olympian Aug 30, 2014 #2 SPOG ( salt, pepper, onion, garlic ) for a simple rub. It's a smaller roast so less than a few hrs @ 275 with an empty foiled pan. I like medium rare so I would remove it at 130 and let it rest. Tim
