Pammi went to Costco a couple weeks ago with a friend of hers and got some pork belly strips. Each was 12-14” long and right about an inch thick. Pammi snagged one for ramen, and I put the rest into SR’s cute last week, flipping the bag each morning.
I rinsed them last night and put them on a rack to dry overnight.
Then onto the kettle using the snake method and lots of apple chips. The first piece came off after about an hour and a half when it reached 165*.
And all done! We’ve had a couple samplers and I’m getting ready to vacuum seal it.
My brother is REALLY hoping that there’s some left when he gets here next month!
