I made a new potato salad today, with a little inspiration from JRPfeff's German Potato Salad, a little from a new cookbook I got today "Franklin BBQ", but mostly from my fridge.
I cubed 3# russet potatoes in 1/2" cubes and put it on the stove for around 20 minutes, put 4 slices of bacon in a 12" cast iron skillet, cooked for a few, then threw in a handful of diced onion every couple of minutes (only 1 onion). I thought I'd leave the onion just opaque but some that I left in the pan browned so back into the pan it all went to crisp a little
Halftime - I noticed my neighbor was flying a kite with her grandkids, I stepped out but decided not to say anything,,,,, they're super cute but I didn't want to distract them. A few minutes later they're knocking on my door so I let the dog out, turned off the burner, and ran outside & watched them fly their kite, get it stuck, etc... fun fun.
I tried to get the kids, kite, & neighbor in the shot but you know what a great photographer I am

Back to the bacon....
I put the potatoes in a colander & sprayed with cold water for a minute, back into the 8qt stock pot, put ~3/4 cup mayo, ~3/4 cup sour cream, ~1/4 cup or less diced dill pickles, a little hot sauce, a little pepper, as much mustard as I dared (french's), ....... stirred it up, and, well, I filled up on it.....turned out to be my dinner.
I didn't peel the potatoes so all the dark stuff isn't bacon & onion, but it was all good, definitely worth repeating or trying your own interpretation (& posting!)
Edit:>> The cubes were a touch more pronounced than I'm used to so I took a potato masher & mashed them a little more to my preferred consistency (some chunks but not all chunks)
