My wife's side of the family from Colombia came to visit us over the holidays and wanted ribs one night. I lightly coated them with Olive Oil, hit them with a simple rub I mixed up and put them on the WSM 2-2-1 with some apple wood. After the foil stage they were falling apart to the point I broke the racks in half, putting them back on. We like them falling off the bone anyway, but some like a bite and tug on ribs. They tasted really good!
