Greetings-

I was wondering what the difference was between Pork Loin and Baby Backs since they are basically from the same area of the pig? I figure that the baby backs are smaller and may take less cooking time. But, from a taste/texture perspective, is there any difference?

I was given several racks of pork loin ribs and was wondering if I can use baby back recipes on them with no problems.

Thanks!

No difference actually. Depending on who you talk to, baby backs are just pork loin backs weighing under 1-3/4 pounds per slab.

I definitely taste a difference and prefer the smaller racks. The bigger ones also seem to have more fat in them, especially under the band.
