Hello all! I just purchased my WSM 22.5 and just had acouple quick questions...

I am going to attempt 8 racks (using weber rib racks) on the top and bottom grate. I was wondering how much charcoal to use for the minion on the 22.5 or if i need to use minion at all. also, is there a problem with the ribs on the top grate dripping on the ones on the bottom? Whats the best way to achieve great ribs for this Halloween throwdown?

Welcome Andrew, Andrew i personally have never used a rib rack, what i have done is buy another 22.5 in grate and lay upside down over the original grate, lay 4 racks of bb on each grate works great, another way i have cooked ribs is stacking the ribs, lay 4 ribs on the grate and put another rack on top of each rib, every time u check the meat move the bottom rib to the top makes the ribs self basting. As for the charcoal fill the ring up and minion the start. Any left un burnt charcoal can be reused. Hope this helps and gl.
 
Thanks for the reply and info! With the Minion do you throw 1/2 a chimney unlit with the 22.5? Also, Do you put food on right away or wait til it gets to desired temp which i assume is 225-250? What about lump fuel?
 
Andrew yeah about half a chimmey of lit over the unlit charcoal, i always put food rite away like to catch temps on the way up a lot easier to dial in, i have never used lump. Andrew if one thing i have learned over the years of bbqing is the simpler u keep it the better the results.
 
Hello, Andrew, and welcome to the party.
Another way to go with the BBs would to be to roll them up and secure with skewers, shown HERE in the "Best Ribs in the Universe" section.
This technique works really well, produces really great ribs, and is completely explained there.

My weber rib rack is over 20 years old & it's outside in the elements , a little discolored but still in great shape! Don't worry bout the upper ones dripping on lower rack. Upper rack may cook a little faster , then bottom
 
Thanks for the tips fellas! I am going to use 3-4 small chunks of apple wood for the BB's. Do I throw them on and bury in the unlit coals or just throw on top of the lit right before cooking? Also, should I foil them? Using a rack to fit 8 racks on there would seem like a pain to wrap halfway through but will def try it if it makes a huge difference. Local grocery store is having a sale $2.69/lb but they dont have any racks of BB's under 2.5lbs. Will this be a problem? The ribs are Smithfield and they appear to be "enhanced" since it says self basting but they tasted ok when i tried one using the oven.My crowd likes really tender ribs, so I hope I can pull it off without foiling them. thanks!
 
Baby backs do well without foiling, but if you want to get fall off the bone tender, use a disposable aluminum pan to lay the racks in & make a lid of HD aluminum foil.
 
One more thing...If i wanted to use lump charcoal, how much different would I treat the Minion start or how would i start it at all? Just a full load burning right away? or same as K briquettes?
