Baby Back Ribs - 3-1-1

Most guys on here tend to use a 2-1-1 process when cooking Baby Back's. Any of you guys use the 3-1-1 process for Baby Back's with good results??
 
It might be that 5 hours cook is too long for a 3 lb rack of ribs.
I don't foil, 'cuz I like a bit of tooth left in the meat, also prefer a good bark.
Saying that about 3 1/2 to 4 hours seems just about right.
