M Mike Hartwell TVWBB Pro Sep 30, 2010 #2 It might be that 5 hours cook is too long for a 3 lb rack of ribs. I don't foil, 'cuz I like a bit of tooth left in the meat, also prefer a good bark. Saying that about 3 1/2 to 4 hours seems just about right.
