I am guessing I can use the apple wood while it is still green but my question is it worth it to wait and let it season? Will it make that much of a difference? Thanks for your help! </div></BLOCKQUOTE>
Yes you can use it and I highly reccomend it. I've been using green apple wood for many, many years, It's my favorite wood to use. You'll need to make some adjustments when using green apple wood. First, cut back on the amount of wood you use. Second, break down the wood into smaller pieces to get a better burn. I split the wood to about a 1/4" thick. When you go to put the green apple wood on the coals, make sure you place it onto lit coals, and try to have an air gap under the wood a bit so it has good airflow.
Green apple wood has a fantastic taste to it, very green apple tasting, very different than seasoned apple wood, in a good way.
Also try and keep the apple wood off the ground when you are seasoning it. Bugs just love fruit wood. I keep mine in my garage. HTH
