My local weis market has apple juice "Cocktal" on sale $1/Half gal. thats quite a bite cheaper than the apple juice I recently bought for Chris's whole turkey breast brine.

My question is can someone tell me the difference between Apple juice and Apple juice "Cocktail" ? I'm guessing by the price differene, the cocktail is watered down, but I don't know for sure. Could one use the cocktail stuff for the brine? any info appreciated. thanks. John

Generally any juice with "cocktail" on the label implies that it contains a significant amount of sugar/water added. The sugar may come in many different forms such as corn syrup, etc. It may also have other fruit juices added such as pear. You'll need to compare the labels to actually see what's in each. The "apple juice" product may also contain other juices and sugar added unless it is truly 100% apple juice.

Thanks interesting, i will compare labels. Maybe i could use the cocktail product in place of the appple juice, and adjust the other ingredients in the brine accordingly. John

John,
Sorry, I forgot the other half of your question concerning brining. I suppose you could use apple juice cocktail in a brine and as you say, adjust the other ingredients. The 'cocktail' will have a fair amount of sugar in it, so you may not want/need to add any more. I don't imagine the cocktail variety would impart as strong of an apple flavor as pure apple juice would.

The apple flavor, that kinda inportant to me. I' don't know why but, the whole turkey breast I did last week, really had a good taste/flavor. I don't know if it was the honey or apple juice in chris's brine, Or the apple wood I used as well. probably the combination.
