Apple Cider Triple-S Rib Sauce

I've modified my original recipe that was posted a number of years ago. It still works great when used on burgers and chicken IHMO. I think it has a very nice sweet, spicy and smoky flavor, the addition of the apple cider pays tribute to my local area which is a large apple producing area of Virginia. Cutting the amount of Chipolte and adding the cider cuts the heat quite a bit. Feel free to drop the Chipolte all together or add more, it's still outstanding either way, I just like their heat and smoky flavor. If you try it post a message to the board and let me know what you think. Makes about 5 1/2 cups.

Apple Cider Triple-S Rib Sauce (Sweet, Spicy, Smokey)

½ cup cider vinegar
2 Chipotle Peppers in Adobo Sauce out of a 7 oz. can (I like La Costena brand)
6 tablespoons packed light brown sugar
¼ cup molasses
¼ cup honey
¼ cup Worcestershire sauce
2 tablespoons yellow mustard
1 tablespoon Ancho chili pepper
2 teaspoons ground black pepper
2 teaspoons garlic powder
1 teaspoon ground allspice
¼ teaspoon ground cloves
4 cups ketchup
1/2 cup Unfiltered Apple Cider

1. Add vinegar and Chipotle peppers to a blender and blend on high until peppers are liquefied.
2. Combine everything in a medium sauce pot, bring to a bowl, reduce heat and simmer for 30 minutes. Use care to avoid burning sauce when bringing to a boil.
3. Season with salt and pepper as needed.
