Apple Brine

Planning on using the apple brine for my turkey this year. The amount of liquid in the recipe isn't enough to cover my small 12lb bird in the bucket I have. If i just double everything will that work or will there be too much salt in the bird after 24 hours?
 
Ive never rubbed it after brining. Maybe just a very light brushing of canola oil to help the skin crisp up. That's it.
 
Will be doing the Apple brine as well

Apple Juice Turkey Brine
1 gallon apple juice, chilled
1 cup Diamond Crystal Kosher Salt
1/2 cup honey 3/4 cup granulated sugar
1/4 cup light brown sugar, packed

Is that the recipe you used?

Did you end up putting a rub on it afterwards?
