Apple Alder Smoked Turkey w/pics

I tried a new bird today, for smoking. I bought it at Ralphs awhile back. Defrosted it during the week. It was 13 lbs or so. I smoked it with Apple and Alder wood. It took roughly 3 hrs, @ around 325F dome, to get her up to 165F, before pulling off the smoker, and letting her rest, covered in foil, for about 45 minutes. It was super juicy, and full of flavor.

Beautiful! How was the skin? I'm trying to work up the nerve to do something similar for thanksgiving or christmas.
