I'm going to make the salmon recipe on this site and was wondering if apple wood would work well. Its all I have. Also, if it is fine to use the apple, how much?? Thanks,

Ron, I just so happen to be cooking this exact recipe right now. My salmon went on the WSM 20 minutes ago! But enough about me...

If apple is all you have, it should be fine in place of alder. Use the same amount as in the recipe, (3 large chunks and several smaller ones) and the results should be virtually the same. Apple and alder are both medium to light smokieness/strength. If all you had was something like hickory or mesquite, you may want to use much less.
 
Oak is another wood traditionally used with salmon, going back ages ago when people would simply attach the fish to a slab of oak and put it next to a fire. Even now you can buy oak planks for ovens and grills to simulate this effect although that's a pretty sorry approximation of the real deal if you ask me.
