I read a thread somewhere which mentioned that one or two varieties of Maple weren't all that good for smoking.. Anyone have any ideas as to which these were??

Also, I have some Black Walnut that I cut last year. Anyone used this before??

Rollin,

Since black walnut is toxic to several types of plants growing nearby, I would have guessed it would not be suitable for smoke wood... but a quick search yielded these two sites that reference it (both recommend light use and mixed with another wood to avoid a bitter taste).

Hope this helps.

The maple I have never used but it is a fruit bearing and I can't find anything saying it is toxic.
I would use in small amounts until you have a feel for the strenght of the smoke.

Rollin,
I've read several sources that names maple as good for most meats, somewhat milder than oak or hickory though I don't know what types of maple would be best. I just recently found some dry maple I'll try in the near future. Good to see someone else in Mass. smokin' pig fat /infopop/emoticons/icon_razz.gif
