Another HH brisket success

Hi all -
We had some friends over yesterday, and I did a 13 lb Choice packer. This was only my second brisket. Used Kevin's HH method the first time. Since it went well, I saw no reason to change. I stayed true to the formula: 2 1/2 hrs. at 300-350, then foil. I started checking for tender at about 1 hr. 15 min. Total time in foil was about 1 hr. 35 min. It came out fantastic! Very tender and juicy. I don't have much brisket experience, either cooking it or eating it. So I can't really compare a HH brisket to one cooked low and slow. But I don't see how it could be much better, if at all. A great confidence builder, for sure! Hope everyone had a great weekend.

That's great to hear Mike. Kevin's HH method is outstanding, and I've turned out better brisket than I've had in any BBQ joint.
 
Congrats Mike! I've always done low & slow, I actually purchased a brisket to do a hh this weekend but ended up not having time to prep, leaving it for next weekend, let's see how it goes.
 
My theory on why HH is better is, the stall is your meat losing moisture and you want to get through it asap.

I have yet to do a HH butt.
 
I'm also an HH brisket man. I've done +/- 12 packers this way and another maybe 6 flats, and all have been very good. I'm much more fond of packers, since the "done" window is much wider, and they are just bigger and tastier. Congrats on your success!
