Another butt question

I had 2 butts in the freezer totaling almost 16 lbs. I am putting them on Friday night. I took them out of the freezer and put them in fridge the other day. I checked them this morning and they still had a long way to go to get thawed out. If I leave them in the fridge there is no way they will be ready to go on tomorrow. I took them out of the fridge and set them on the counter. How long can I leave them out?

I just took 2 7 pounders out of the freezer Tuesday night to go on Saturday morning, last night I took them out and put them in the sink covered with cold water for a couple hours. Put them back in the fridge last night, checked them just a little while ago and they are thawed and ready.

Thanks for the tip Michael. I have them in water now. I'll put them back in the fridge before I go to bed tonight. They should be good to go by tomorrow night.

Sometimes I "hurry" a thaw a bit by sitting on the counter for a few hours, but always put back in the fridge to finish the process. I have also smoked butts when I knew they were a tad frozen in the center butt never had a problem. You have to remember, it's not like you're putting them in a 350 degree oven. Just my opinion. Good luck on your cook!

Yeah, cold water in the sink to thaw them out when not quite ready and if it is still a little on the frozen side no harm done.

I have smoked them when they are still partially frozen and still had good results

Same here!
I've done fully frozen butts also (following a tip I read here ). I just run some hot water over the cryo to loosen it. The time to come up to target temps takes longer, but once dialed in, the overall time doesn't take any longer.
I find smoking still frozen roasts adds alot more juiciness IMO.:wsm:
