Another Brisket Question

My best (well cheapest) source of brisket is the local Costco. Tried it once, but the poor thing had been trimmed to death and while I'm sure there was a yum-yum window somewhere along the way temp-wise, I missed it.

Is good brisket possible without a reasonable fat cap?
 
Possible? Yes, though I'd recommend a shorter, high-heat cook with foil. Some cook it under something (like butt) that will drip on it and baste it; others put bacon on top, but I've never been a fan of this approach.

I'd seek a better source. Apparently Wal-Mart has whole Select packers. Ask arond elsewhere as well. Many places do not display whole briskets but have them in the back.
 
i just got back from my lunch break stopping at my local super walmart - picked up a 10.50 lb packer - $1.68/lb. = $17.64. great price considering they cost 3.99/lb in my area. i am going to start it 11pm saturday ready for dinner 4pm sunday. i will post pics late sunday.

$3.99/lb is probably a flat only. I see a lot of flats, or pieces of flats, sold for $3.99 everywhere I go. Never pay more than $1.89/lb for a whole packer. $1.68/lb is what all the Wal-Marts sell it for, and I got one for $1.59/lb at a restaurant supply house.
