Andouille Sausage

Andouille does not taste like a Brat at all but there are hundreds of sausage recipes out there and I'll bet someone has a clone Johnsonville brat recipe out there.
I will take a look later in my collection and see if have one.

Where exactly do I get casings. Do I just twist them until they snap every 8-10inches or so to get them in links or is there other ways?

If you plan on just doing small batches IMHO here's a good start-up system.

These little grinders work just fine. I have been using one for years with no problems. They show up on Ebay frequently, and are inexpensive enough that you can get spares for back-up or parts. The if you are only going to make batches of one or two pounds, a hand stuffing funnel will serve the need.
