Tony has been a great “email” pal for some time now and he has shared some truly stupendous looking good available from his butcher among which has been “Kilties” smallish sausages wrapped with bacon and grilled or smoked.
So after chatting back and forth for some time about finding a source, I stopped in at my local “Mom and Pop” butcher and asked “I don’t need them right away but, could you make me up some?” He replied, “I’m making sausages up first thing in the morning, how many do you want?”
So, I picked up 5 pounds yesterday afternoon and did the bacon wrap and will do a test run for time and temp right now!

I’m thinking around twenty to twenty five minutes. We shall see how these play out!
