Alsatian Cabbage Soup with Blue Cheese and Bacon

Want something really good to warm you up? We made this some years ago and it was really good. Just make sure the cabbage is cooked enough.

Alsatian Cabbage Soup with Blue Cheese and Bacon

4 slices of bacon cut into medium dice
1 medium onion, minced
1/2 medium cabbage, sliced thin
1/4 cup dry white wine
1/4 tsp. dried thyme
6 cups chicken stock or canned broth
ground black pepper
4 oz. blue cheese, crumbled

1. Fry bacon in a soup kettle over medium high heat, until crisp. Remove and set aside. Discard all but 2 TB. of bacon drippings. Add onion, saute until tender about 3 minutes. Add cabbage, wine and thyme, cover and cook over medium heat, stirring occasionally until cabbage is tender, about 5 minutes. Add stock, bring to boil. Season with 1/2 tsp. black pepper.
2. Ladle into bowls and sprinkle with the cheese and bacon. Makes 4 servings
