Alligator Ribs

Did anyone see BBQ with Bobby Flay last night, he visited some place that smoked alligator ribs.
They looked good, has anybody tried it. Here's their reciepe.

He didn't cook these, some place called Alligator Alley did these and they used an offset for the smoking part.
Flay probably still doesn't know how to use a WSM!

I tought the alligator ribs looked as if they had quite a bit of fat on them, that suprized me. They did look good when done.

From what I understand they're very lean and you have to watch how you cook them.
The meat is very light it may have looked like fat??
