We had a snow storm last Sunday, Feb 12, which finished up at around noon. After blowing out the driveway, and shovelling the deck, it was time to Grill.
I got the idea to combine a couple of my favourite recipes for whole chicken. Alabama Chicken is a BBQ half chicken with a white barbecue sauce applied at the end. Ricotta chicken is a butterflied whole chicken with ricotta cheese mixture stuffed under the skin. What happens when you combine the two? Stay tuned.
First up is the ricotta mixture. Riccota cheese, fresh thyme, dried oregano, minced garlic, and an egg.

We have a chicken stepping up to the plate to take one for the team.
It's butterfly time:

I think it needs a little rub.
And after 90 minutes on the grill we wind up with this:
Time for a little white sauace. I know it doesn't look very appetizing immediately after applying the sauce but give it some time. Trust me.
Here it is off the grill and ready to carve.
Here are a couple of shots of the finished chicken. I struggled a bit with the lighting. The photos are over exposed. I need to practice with the Digital Rebel a little more.
We all really enjoyed this dish, and I plan to do it again in the summer.
