So I've never really added wood chunks to my charcoal before in my OTG (I've used chips but not chunks)...I have a smoker and have always used that for smoking meat.
So for example if I'm doing chicken indirect....do I add the charcoal directly to the gray coals? And if so...do you let it burn for a while first or just throw the wood and meat on and shut the lid.
I guess I'm concerned with the wood chunk flaming up and ruining what's under the lid. Thanks!
