achieving High Heat?

I am doing a practice turkey today. I did a practice burn 2 days ago to see how hot I could get the WSM, was able to get it up to 300-325 with briquets and a little work, I bought some lump because they say it burns hotter, should I mix 1 chimney of charcoal with 1 chimney of lump or is that a bad idea, any suggestions would be appreciated

No its not a bad idea, I mix or match depending whats on hand.
What brand of lump are you using?

Tim

what are your thoughts on Stubbs lump? I found 1 bag at lowes but I heard somewhere that Cowboy actually makes Stubbs lump also. Is that correct?

I didn't know that stubbs had lump. The natural briqs are alright and yep I read that Cowboy does make it also.

Tim

Cowboy lump burns hot and fast like balsa-wood in my limited exp with that brand. But since your mixin it in with the briqs and you sort it to check for funny lookin scraps(plywood, flooring etc)then I would just use it.
Its gonna be a relatively short cook at HH so it shouldn't hurt.
Good luck!

used frontier lump. sorted through a bag and picked outthe biggest stuff, made in mexico so I wonder what kind of wood I am smoking with....mmmmm, I will say it took 2 chimneys of lump and 1 and a half chimneys of blue K to get up to 335 degrees, using the digiq

Really? That much lump and k to get up to 335?
I read that frontier is a hard starter at the get go. so hang on, with the ATC that should help even it out.

What size WSM are you using?

Tim

Using a 22" and right now it is having a hard time staying at 315, on the digiq temp. lid says its at275, I am sticking with the digiq because I can only keep my hand on the lid for 2-3 sec before it burns. the lump fired up faster than the blue K did. I am thinking that the turkey will just take a little longer at the 315 temp. I am sure glad this is the trial run

I'm not an expert on what burns hotter but I have reached over 375F using RO lump WITH water in the pan. I actually started that cook full Minion for ribs, pulled them, added a full chimney of lit to the remaining coals and watched the temps rise. My pan had boiled off at least by half but I got great skin on 2 rootbeer can chickens after 90 minutes.
Now I cook with a dry pan and am doing the Butterflied Turkey on Sunday.

Good luck !

I didn't know Stubbs had lump. I use their briquettes and I like them. They burn good, minimum ash, and a cleaner more natural smelling fire than with Kingsford. I like to use Royal Oak lump which I get at WalMart.
