Accidental Turkey Pastrami.

Made a goof last weekend that turned out pretty good. I planned to make the boneless skinless turkey breast recipe Chris Allingham posted last month:

But I goofed up and used kosher salt instead of sugar in the rub. (Smart, smart, smart, DUMB as my grandmother used to say.)

Anyway it turned out to tase very much like turkey pastrami.

Next time I make it I'm going to cut back on the salt by about half and either add ground corriander or substitute it for the celery salt.
 
Yep. That was all and it was a pure accident.

Rolled and tied it with butcher string, smoked it with cherry, basted with apple juice.

Consensus of my guests was to cut back on the salt next time I'd say about 50%. I'm going to do that and let it cure for a few hours.
