War story.
I pretty much cooked all weekend long because we had a dinner party Saturday night and my law partner orders up pulled pork whenever I am cooking... So, the WSM was going from about 3:00 Friday afternoon to Sunday Morning.
My son's LAX game was Saturday and it came up because I smelled like smoke and had some grit under my nails... My neighbor says: "Was that you smoking? It smelled awesome and was driving me crazy!" I acknowledged and we talked about cooking for a bit. Made me feel good and I am sure you folks have had similar experiences. This slow cooking with smoke is really a lost art. Some folks have mentioned that with grilling but it is lost with BBQ as well unless you are a "... student."
Question.
I bought an 18 kettle when my 9 year old daughter was born to cook ribs out for the family for her Christening. To say the least... It has seen better days. It would take 3 hours and new parts to bring it back to glory and still, it'd have dings in the porcelin with some rust and the straps supporting the grill are bent a bit.
So, do I restore it and spend more than it is worth (with the hope that my daughter will some day appreciate it) or just go pick up another and pass this one on as used to someone who needs it?
Take it easy,
JKC
