A tale of 2 butts

Put a 7.5 and a 6lb butt in last night and they are a comparason of contrasts.

After a slight temp problem ( WSM got down to 195 while I slpet betwen 0400 and 0600) was corrected by a chimney of briquettes, the 7.5lber dutifully went to 195 but the 6 lber next to it on the top grate wont go above 185 and sinks back to 183 now (cooker at 245). Going to remove and foil and finish in the oven.

It is irritating the 17 hours is not enough to finish it in the cooker.

Maybe I missed something.

Did you test the temp in the 6 lb'r in different places ? Cooking butts can, at times, be exasperating because they are not always predictable. If you can stick a meat fork in easily and it will twist some, don't worry about the darn temp.

Just goes to show they are done when they are done. Since no 2 butts are the same even similar weight can vary in cooking time. I think the 6 lber had more fat and was rendering longer. when you looked in the foil after putting in oven was there a lot of fat? How about when you pulled them? I also wonder like Paul did you check it in more than 1 spot?
