Had the family over for Thanksgiving and this was the first time I cooked a smoked turkey for Thanksgiving. My family always preferred the cleaner taste of the oven. But since I'm cooking they got it smoked how I like it :) Verdict: they loved it. (Quote: "its so different and flavorful) I used the salted butterflied turkey recipe on this site as my guide (http://virtualweberbullet.com/turkey8.html). I started with a full lit chimney starter of Kingsford blue, then filled the charcoal ring with BGE lump. Added 1 chunk each of cherry and hickory, foiled empty water pan, vents wide open. 2 hours later... yummy smokey and juicy.

Question:
Has anyone ever tried cooking a spatchcocked turkey with no water pan at all, I've done that with chicken but was concerned about 2 hours exposure to the coals. Anyhow, I may try that for Christmas.
