Well today I got the chance to do a couple of birds w/Big Rons "In the House" and his BBQ sauce. The birds where a little over 5lbs each, dry rubbed the night before w/Kosher salt and little In the House, bagged and let sit in the fridge over night. Next day blotted dry ,a little Olive oil and more rub and onto the smoker w/some apple wood. Cooked at 290-310 until internal hit 180 about 2hrs and 45min. on the wsm. The rub of course was very good and sorry to say I can't say which I like best between the 2 I've tried. The sauce is really pretty nice as well, for a change it was something everyone liked not to sweet with a suttle tingle at the finish, thought I was gonna crap when my wife said she liked the bite. Some day I'll learn how to use a camera.
THANKS again to BIG RON for letting me try the rubs and thanks for looking.
