8.5lb Picnic Cook Log

If anyone wanted to see, here is a cook log I did Sunday for an 8.5lb picnic. I removed the skin, smeared worchestershire sauce and rubbed it the night before with TXBBQ Rub #1. Rubbed again prior to putting it in the cooker. Cooked to 190, pulled like a champ, very tender, moist and nice smoke ring.

X = added water

Don't know what happened to the format, it looked fine when I cut and pasted it. I tried posting the link through pixpond.com but it wouldn't work. If anyone knows how to post things other than pic's I am looking for advice, as you can see. Thanks.
 
Thanks for posting it Larry.

As one who is still a virtual newbie compared to you guys, I love to have stuff as a reference to what people that know what they are doing are doing.

One question though. Is the "Z" marking that you added coals beside the wrong line. The one above it has the lower temp reading. Or, when you added water before did you see that you would be needing them?

Good observation. But no "it's not on the wrong line". I didn't add the coals because the temp was low. I noticed when checking the pit that I wasn't going to have enough to get through the cook. So I added them at that time, versus fighting with low temps. Also, I added "unlit" coals because my temps had been fairly stable, I didn't want to add lit coals and have a heat surge. Make sense?

When I buy a pork butt at Sam's it has 2 pieces in the package, a picnic and I forget what they call the other piece. I've never noticed any skin on either one. Are you talking about the same thing?

I think , when I get a pack of pork butts at Sams , I get two pork butts in that pack. The butt is the upper part of the shoulder. The pick-nic is the bottom end "nub" of the shoulder. I have never seem skin on a butt, but I have on a pick-nic. When I get the whole shoulder , they have skin on the "pick-nic "end but the butt end is almost always skinless. A few years ago I got some shoulders that still had the full skin on them.

Ditto to what Rick said, if there isn't any skin on it it is most likely the "butt" portion of the shoulder you are purchasing.

I agree with Rick and Larry on the twin pack...You probably have 2 butts in there. The bone will tell you for sure.
